Black Adder Tea Pulled Pork Tacos

Preheat the oven to 130 C.

Step 1
Immerse the tea in the boiling water and leave to infuse for 3-5 minutes before removing the tea bags.

Step 2
Place the pork in a large casserole dish and pour over the tea, soy sauce, miso, garlic, and ginger.

Step 3
Cover with baking paper and then the casserole lid.
Cook for 5 hours, removing the lid and baking paper for the last 30 minutes of cooking.

Step 4
Allow to cool slightly before removing the meat from the liquid and setting aside.
Scoop off the fat as it rises in the liquid.

Step 5
Once the meat has cooled enough to handle, remove the skin, fat and bone and using forks pull the meat into small-medium sized pieces. Set aside and keep warm.

Step 6
Place the liquid in a small saucepan over a medium heat, simmer until reduced to about ½ cup.  Stir through the barbecue sauce.  Pour the sauce over the meat and mix to combine.

Step 7
Quickly warm the tortillas in the microwave or in a hot frying pan.

Serve the pulled pork with coleslaw and tortillas.

Green Tea Chicken Noodle Soup

Step 1
Immerse the tea bags in the hot water for 3-5 minutes before removing and discarding.

Step 2
Pour the green tea and chicken stock into a medium sized saucepan and add the garlic, ginger, soy and fish sauces.

Step 3
Bring the liquid to the boil and then reduce to a simmer.  Taste the broth and season with a little salt if needed.

Step 4
Add the mushrooms, chicken and noodles to the pan and simmer until the chicken is just cooked through and the noodles tender.

Step 5
Cut the bok choy in half lengthways and add to the pan for the last few minutes of cooking.

Step 6
Distribute the chicken, noodles and vegetables between 4 bowls and then pour over the liquid.
Sprinkle with coriander leaves and shallots to serve.

Vanilla Protein Pancakes

Step 1

Place oats into the bowl of a food processor or blender and blitz until finely chopped.

Step 2

Add eggs, almond milk, protein powder, salt and coconut oil into the blender.  Cover and then blend until smooth.

Step 3

Pour the mixture into a jug, cover and refrigerate for 1 hour.

Step 4

Heat a frying pan or crepe pan over a medium heat, add a drizzle of oil, swirling to cover the base.
Pour enough batter into the frying pan to just coat the surface. Cook for a minute or so before flipping the pancakes and then continuing to cook until lightly golden. Repeat with remaining batter.
Serve the pancakes with maple syrup, fresh fruit, toasted coconut etc…

Step 1

Place the bananas into a blender with the rest of the ingredients, cover and blend until smooth.

Pour into a loaf tin or plastic container, cover and freeze until firm.

Apricot Super Seed Protein Bars

Step 1
Line a 15x20cm tin with baking paper.

Step 2
Combine the almonds, apricots, seeds, coconut and protein powder together in a mixing bowl.

Step 3
Gently melt the coconut oil and honey together and pour into the dry ingredients. Mix well.

Step 4
Press the mixture into the prepared tin and refrigerate until firm.
